Baked Cajun Shrimp Sandwiches

Ingredients:

1 1/2 lbs large to medium uncooked shrimp, peeled, deveined, diced into 1/2 inch pieces

4 teaspoons creole seasoning, divided

1 loaf Ciabatta of French bread

3 tablespoons butter

1/2 cup chopped green onions, plus a few tablespoons extra for garnish

1/2 cup finely diced celery

1/2 cup finely diced green or red pepper

2 cloves garlic, minced

Half lemon

3/4 cup mayonnaise

1/4 cup sour cream

1 cup shredded Monterey jack cheese

1 cup shredded cheddar cheese

Directions:

Preheat oven to 350 degrees. Cut Ciabatta bread in half or slice of top of bread. Scoop out less than half a inch out of bread and set aside. Season shrimp with 2 teaspoons and set aside. In a large skillet, melt butter and cook onions, celery, bell pepper, for a couple minutes add garlic, season with remaining spices cook 30 seconds more. Add shrimp cook for a couple minutes or just until it turns pink. Squeeze lemon juice over shrimp. In a bowl mix shrimp with sour cream and mayonnaise. Add cheese. Spread Ciabatta with shrimp mixture. Bake at 350°F oven for about 20-30 minutes until golden brown on top. Garnish with green onions. Cut into slices and serve.
