Asparagus Leek Soup

Asparagus Leek Soup (WLUK)

Ingredients:

3 large leeks sliced into 1/2 inch pieces

1 large onion- chopped

3 - 4 tablespoons butter

4 medium potatoes peeled & diced

3 medium carrots sliced

1 tsp salt

6 1/2 cups or about 2 boxes chicken broth

1/2 cup uncooked long grain rice

1 lb fresh asparagus cut into 1 inch pieces

1/2 lb. spinach chopped into 1/2 inch pieces

1/4 tsp pepper

1 cup heavy cream

Directions:

In large soup pot saute' leeks & onions in butter till tender. Add potatoes, carrots, salt, broth & rice. Cover & bring to boil; reduce heat & simmer 30 minutes. Stir in asparagus & simmer 10 minutes or until vegetables are tender. Add spinach, pepper & cream- then heat through. Serve.
