Bacon Wrapped Onion Rings

The Northeast Wisconsin Craft Beer Festival presented by Festival Foods takes place this weekend at Shopko Hall. On Saturday, October 7th, you can enjoy more than 200 beers from 50 different breweries. Click here for more information.

Chef Nicole from Backstage also joined in on the action and made bacon wrapped onion rings.

Onion Rings:

2 Vidalia Onions

Thin cut bacon

Beer Batter:

1 egg

1 tsp seasoned salt

2 cups Long Beard Stout (Leatherheads)

1 1/4 cups flour

To make Onion Rings:

Cut onion into slices. Dust in flour and dip into beer batter, shaking off excess batter. Wrap bacon tightly around ring. Re-dip into beer batter and fry in oil for approx 3 minutes. Serve with cheese dip on the side!!

Beer Cheese Sauce:

1 Tbsp Butter

1 Tbsp Flour

1 1/2 cups Heavy Cream

1/2 cup Long Beard Stout

4 oz Cheddar Cheese

Salt and pepper to taste

Pinch of Cayenne

Melt butter in sauce pan. Add flour and stir to combine. Then add beer and cream. Slowly add cheese until melted. Serve warm.
