      GREEN BAY - Oneida Casino is celebrating it's 20th Anniversary!  Ken Hall is the casino's executive chef at both the main and mason street locations.

      Chef Ken joined FOX 11's Emily Deem on Good Day Wisconsin to talk about the celebration and to feature some great dishes served at their Countryville Bar and Grill.

      Almond crusted chicken tender salad

      2ea         chicken tenders

      4oz         mixed greens

      1c            corn flakes

      1c            sliced almonds

      1c            seasoned flour

      1c            water

      2T           diced tomatoes

      2T           diced cucumbers

      2T           crumbled bacon

      1/4c       shredded cheese

      4oz         honey mustard dressing

      Method;

      Divide seasoned flour into two bowls.

      In one stir in the water until smooth

      Place the corn flakes and almonds together and crush slightly.

      Place chicken tender in the seasoned flour first then in the wet mixture and draining off excess into the corn flake mixture.

      Repeat with the remaining tender.

      Place in the 325 degree oil and cook until browned and cooked through.

      Place lettuces in bowl and top with the diced vegetables, bacon and cheese.

      Cut the chicken tenders into thin strips and serve atop the salad.

      Perch plate

      1lb          Perch fillets

      8oz         beer batter

      1c            seasoned flour

      1c            panko crumbs

      2c            shredded cabbage

      1/2c       slaw dressing

      2oz         tartar sauce

      1ea         lemon wedge

      Place perch in seasoned flour then beer batter then panko crumbs.

      Place in 325 degree oil and cook until golden and they float, drain well.

      Serve with coleslaw and lemon wedge.
