She shared a recipe for a Roasted Shrimp Salad.21/2# 16/20 count shrimp - peeled & deveined. tails off3TBS olive oil3 TBS lime juice2 tsp chipotle powder2 tsp paprika2 tsp seasoned salt1 cup mayo3 TBS orange juice concentrate1 TBS white wine vinegar1/2 cup fresh dill - chopped1/2 cup sliced green onions1 jar capers1. Place shrimp in bowl and toss with chipotle, paprika, salt, olive oil & lime juice2 Place in 400 degree oven for 10-15 minutes till opaque3. Allow cooked shrimp to come to room temperature4. Cut each shrimp into 4-5 pieces5. Placedrained capers on pan coated with no stick oven spray for 5-10 minutes till starting to burst open6. Whisk mayo, vinegar & concentrate in bowl7.
