BELLEVUE - For people always on the go, it's hard to find time to prepare a delicious and healthy meal. That's especially true for parents, but one group of moms is helping to ease that challenge.
The moms from 10 Below Freezer Meals have teamed up with the Village of Bellevue to hold monthly workshops to help get meals to the table a little easier. The workshops provide people an opportunity to learn healthy and delicious recipes that can be made and stored for those times when you're in a pinch.

Recipes from the morning:
Turkey and Red Roasted Pepper Meatloaf
1 1/2 pounds ground turkey
1 small yellow onion, chopped
1/2 cup bread crumbs or oatmeal
1 egg, beaten
1 cup grated Parmesan
2 tablespoons Dijon mustard
1 cup flat-leaf parsley, chopped
1 (7-ounce) jar roasted red peppers
¾ teaspoon salt
pepper to taste
Finely chop onion and parsley. Coarsely chop red peppers, discarding any oil or liquid they may come with. Combine the turkey, onion, bread crumbs, egg, Parmesan, mustard, the parsley, red peppers, 3/4 teaspoon salt, and 1/2 teaspoon pepper in a large bowl. Shape the meat into an 8-inch loaf and freeze.
To Serve: Thaw. Place in greased loaf pan.
Heat oven to 400° F. Bake until no trace of pink remains (internal temperature should be 165° F), about 45 minutes. Transfer to a cutting board and let rest 15 minutes before slicing.
Basil Balsamic Pork Chops
5 boneless pork chops
1/2 cup olive oil
1/4 cup balsamic vinegar
2 tablespoons soy sauce
2 tablespoons lemon juice
1 tablespoon honey
1 1/2 teaspoons garlic minced
1 1/2 teaspoons dry basil
1/2 teaspoon black pepper
Trim fat from pork chops if necessary. Place chops in a freezer bag. In a bowl mix together olive oil, balsamic vinegar, soy sauce, lemon juice, honey, minced garlic, dry basil, and pepper. Pour over chops, seal bag shake to mix. Freeze.
To serve: Thaw, grill or broil in oven until internal temperature is 145 degrees.
