Healthy & Delicious Thanksgiving Side Dishes

Alicia Slusarek joined us in the kitchen to showcase some healthy and delicious Thanksgiving side dishes (WLUK/Justin Steinbrinck)

(WLUK) -- As Thanksgiving approaches, we are on the search for healthy, yet delicious side dishes you can serve at your holiday table this year.

Registered Dietician and Nutritionist, Alicia Slusarek, joined us in the kitchen this morning to show some of her favorite ideas for meal options that can make you light up with a smile without weighing you down with calories.


RECIPES:

SWEET CINNAMON SQUASH

Ingredients:

1 medium butternut squash

4 tablespoons coconut oil

2 medium onions

1-2T cinnamon

4 tablespoons dried cranberries

Salt

Instructions:

Preheat oven to 375°F.

Peel squash and cut in half lengthwise. Scoop out seeds from the center and discard.

Cut squash into large chunks. Coat with 2T of the coconut oil.

Bake for about 30 minutes, or until well caramelized. Salt lightly.

Peel onions and cut into large chunks. Coat with remaining 2 tablespoons olive oil.

Bake for about 20 minutes, or until well caramelized.

When the squash and onions are done, combine and toss with cinnamon and cranberries.

Serve warm.


THANKSGIVING THYME -- ROASTED BRUSSEL SPROUTS

Ingredients:

8 cups Brussels sprouts, trimmed and halved

2 tablespoons coconut oil

1 teaspoon fresh thyme, chopped

1 teaspoon salt

pinch of pepper

2 tablespoons balsamic vinegar

Instructions

Preheat oven to 425 degrees F.

Toss Brussels sprouts with oil, thyme salt and pepper in a large bowl. Spread out in a single layer

on a large rimmed baking sheet and roast for about 20 to 25 minutes, stirring once or twice until

tender.

Just before serving, drizzle with balsamic vinegar.
