      ASHWAUBENON - This week's Cooking With You Guest is Renee Umnus of De Pere!Renee joined FOX 11's Emily Deem on Good Day Wisconsin to make some festive recipes for summer!Peach MojitoServes 62 ripe peaches (the riper the better)3 fresh limes (cut 1 1/2 lime into little pieces to muddle, you will squeeze the other 1 1/2 for fresh lime juice)3 sprigs of fresh mint6 Tbsp. sugarMuddle all the above (except the fresh lime juice).Add lime juice, 16 oz. white rum, 24 oz. ginger ale. Stir and serve over ice.Cucumber Salsa4 to 6 Cucumbers - Seeded and diced1 Bunch of Green Onions - Chopped3 to 4 Jalapenos - Seeded and Diced1 Bunch of Cilantro - Finely chopped1 to 2 T. Olive OilSalt to TasteMix together all ingredients and refrigerate overnight.Serve with your favorite chips or crackers
