Chicken Cordon Bleu Sandwiches

4 boneless chicken breasts, pounded slightly
1/2 cup zesty Italian dressing
Salt and pepper
4 thin slices ham
4 to 8 slices Swiss cheese
4 split and toasted buns or rolls
2/3 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon honey


Pour Italian dressing over the chicken and let marinate in the fridge for at least 30 minutes or up to 8 hours. Remove chicken from marinade. Season chicken with a little salt and pepper and grill chicken or fry in a skillet until cooked through, flipping once. Mix together mayo, mustard, and honey. Spread generously on toasted buns. Place chicken, a piece of ham, and 1 to 2 pieces of cheese on each roll. Wrap sandwiches in foil to toast over low heat on the grill or place them on a foil lined baking sheet in a preheated 375 degree oven for a few minutes until bun gets toasted and cheese melts. Makes 4 sandwiches.
