Amy’s Sesame Noodle Salad in a Jar


8 oz spaghetti pasta, cooked to package directions

1/2 red bell pepper, cut into thin strips

1/2 cup sugar snap peas, cut into 1/2-inch pieces

2 green onions, thinly sliced

1/3 cup peanut butter

1 tablespoon toasted sesame oil

2 tablespoons sugar

2 tablespoons soy sauce

1 tablespoon rice wine vinegar

1 teaspoon sriracha sauce

1/4 cup hot water


In a medium mixing bowl, stir to combine peanut butter, sesame oil, sugar, soy sauce, rice vinegar, and sriracha sauce. Slowly add hot tap water to thin sauce.

Divide all ingredients evenly into mason jars beginning with peanut sauce, pasta, bell pepper, peas and onion. Shake to combine before serving.

If not using mason jars, all ingredients can be combined in a large bowl. Best when served at room temperature.
