Amy’s Greek Quinoa Salad



Juice from 1 lemon

1/2 cup olive oil

3 cloves garlic, minced

Salt and pepper

1 1/2 cups Quinoa

3 cups water

2 cups diced cucumber

2 cups seeded and diced tomatoes

1 cup pitted kalamata olives,

1/2 a red onion, sliced

1 cup feta cheese, cut in small cubes


In a large bowl whisk together first 3 ingredients. Season with a little salt and pepper. Bring water to boil and add quinoa. Cover and simmer 16 to 20 min or until all water is absorbed. Remove from heat and fluff with a fork. Let cool a bit. Toss quinoa together in the dressing with cucumber, tomato, olives, red onion and feta cheese. Season with a little more salt and pepper if needed. Cover and refrigerate at least an hour before serving.
