Celebrating Nutrition Month at UW-Green Bay
GREEN BAY (WLUK) -- March is Nutrition Month and the dining services at UW-Green Bay are making sure the students and staff are eating healthy throughout the academic year. From feeding the student athletes, to coming up with healthy ideas for every meal of the day, there are challenges that this staff takes on every day.
Justin Steinbrinck spent some time on campus this morning learning about some of the healthy options that are available, sitting down for breakfast with the men's soccer team, and making some nutritious recipes with the campus executive chef for your next get-together with family and friends.
The main dining facility, called the "Leona Cloud Commons" is open to not just students and staff, but also the general public. It is an "all-you-care-to-eat" for one price, ranging between $6 - $9 per meal.

Healthy eating can make a big difference in the performance of student athletes. Here's the recipe for Healthier Stuffed Jalapenos:
• 6 Jalapeno Peppers Cut in half
• 1 Cup Plain Hummus
• ½ Cup Black Beans
• ½ Cup Corn
• ½ Cup Green Onion
• ¼ Cup Chopped Cilantro
• 2T Chili Powder
• 2T Paprika
• 2T Chopped Garlic
• 1tsp. Salt
• 1tsp. Black Pepper
• 1 Cup Panko Bread Crumbs
• ½ Cup Oil
• 2T Parsley
• Mix all filling ingredients together.
• In a separate bowl, combine all topping ingredients together.
• Fill peppers and top with topping mixture.
• Bake in a 350 degree oven for 10 minutes.
