      Smothered Potato Salad

      Ingredients:

      1 – 2 lbs red potatoes

      12-16 oz sour cream

      12 oz shredded cheddar cheese

      1 pkg bacon

      2 bunches green onion, chopped

      Directions:

      Cut potatoes into bite size pieces and roast in a 375 degree oven until fork tender. Remove from oven and let cool. In a pan fry bacon until crispy. Set on the side. Chop green onion. Place the potatoes in a large mixing bowl stir in the sour cream, cheese, green onion and bacon. Serve warm or cold.
