      Smothered Potato Salad

      Ingredients:1 - 2 lbs red potatoes12-16 oz sour cream12 oz shredded cheddar cheese1 pkg bacon2 bunches green onion, choppedDirections:Cut potatoes into bite size pieces and roast in a 375 degree oven until fork tender. Remove from oven and let cool. In a pan fry bacon until crispy. Set on the side. Chop green onion. Place the potatoes in a large mixing bowl stir in the sour cream, cheese, green onion and bacon. Serve warm or cold.{}
