      Roasted Strawberry Trifles

      Ingredients:

      1/2 angle food cake or pound cake of your liking, cut into small pieces

      1/2 lb fresh strawberries, hulled and halved

      1/4 cup granulated sugar

      6 oz mascarpone cheese

      1/2 cup heavy cream

      1/4 cup powdered sugar

      1 tbsp vanilla

      Directions:

      In a medium size oven save dish place strawberries and sprinkle with granulated sugar. Place in a 400 degree oven for 30 minutes. Cool. In a mixing bowl, whip mascarpone with powdered sugar and vanilla. Once combined whisk in heavy cream. Whip on high until mixture is light and fluffy.

      To assemble place a piece of cake in the bottom of the glass. Then add 2 tbsp of strawberries followed by 2 tbsp cream mixture. Repeat process until glasses are full. Enjoy right away or store in the fridge for up to 2 days.
