Rib Eye Steaks with Chile Cream Sauce



1 Tbsp cumin
1 Tbsp  garlic salt
3 tsp chili powder
2 tsp black pepper
4 rib eye steaks
2 Tbsp olive oil
2 Tbsp butter
1 Tbsp onion, finely chopped
1 clove garlic, minced
1 3 oz. can diced green chiles
1/4 cup chicken broth
1 cup heavy cream
1 lime
1 cup shredded Monterey jack cheese or pepperjack cheese
1/4 cup chopped fresh cilantro


Mix first 4 ingredients together. Place steaks in a glass pan and rub spice mixture into both sides of the meat.  Cover with plastic wrap and refrigerate for 2 to 8 hours.

For the sauce, cook  onion in butter on low heat for a few minutes until onion is soft.  Add garlic.  Sautee for 30 second.  Turn up heat and add chiles, cream and broth.  Let sauce simmer for a few minutes to thicken a bit.

Before drizzle steaks  with olive oil.  Grill steaks to your liking.  Squeeze fresh lime juice over the steaks.  Spoon sauce on top.  Sprinkle with cheese and cilantro.
