      Potato Chip Chicken

      Ingredients:

      1 cup juice from lemons, limes or sour oranges

      1 teaspoon salt

      1 ½ cups dry white wine

      6 cloves garlic, crushed

      1 teaspoon basil

      3 broiler chickens, quartered

      1 cup butter, melted

      3 cups potato chips, crumbled

      Directions:

      Preheat oven to 400 degrees.  In a large bowl, combine juices, salt, pepper, wine, garlic and basil.  Add chicken pieces, cover and marinate in refrigerator 4 hours, turning occasionally.  Remove chicken pieces and pat dry.  Dip each piece into melted butter, roll in crumbled chips.  Arrange in large, flat, buttered baking dish. Bake, uncovered, for 1 hour.
