      Pistachio Salad

      Ingredients:

      1  4-serving package instant pistachio pudding mix
      1  (20 ounce) can crushed pineapple, drained
      1 1/2 cups mini marshmallows
      1 (12 ounce) container frozen whipped topping, thawed
      1/2 cup flaked coconut
      1/2 cup maraschino cherries, drained/chopped
      1/3 cup chopped pecans or walnuts

      Directions:

      In a large bowl, combine pudding mix and pineapple; Mix well. Add marshmallows and whipped topping. Toss in coconut and mix well. Fold in cherries and nuts. Transfer to a serving dish and top with additional halved cherries and coconut if desired. Chill for a least 1 hour, can be made the day before.
