Mushroom, Spinach and Boursin Cheese Beef Tenderloin

Ingredients:8 oz Mixed Mushrooms3 oz Boursin Cheese3 Tbsp Olive OilSalt and Pepper, To Taste4 Beef Tenderloin Filets1 cup Spinach cooked, drained and choppedDirections:Cut mushrooms to desired size. Season with salt and pepper and 2 tablespoons olive oil. Roast mushrooms in 350 oven for 15 minutes. Remove and cool. Add Boursin cheese and cooked spinach to mushrooms and mix well. Season steak with salt, pepper and 1 tablespoon olive oil. Sear steak on both sides, top with mushroom, Boursin cheese and spinach mixture. Bake in 350 oven until desired doneness is achieved.
