      Mexican Meatballs
      Ingredients for Meatballs:1 pound lean (at least 80%) ground beef1 egg 1/2 cup dry bread crumbs 1/4 cup milk 1/2 teaspoon salt 1/2 teaspoon Worcestershire sauce 1/4 teaspoon pepper 1/4 cup finely diced onion 1/4 cup chopped cilantro or Italian parsley1 teaspoon Mexican oreganoa few dashes hot saucePreheat oven to 400F. In large bowl, mix all ingredients. Shape mixture into twenty 1 1/2-inch meatballs. Place on a large baking sheet. Bake uncovered 20 to 25 minutes or until no longer pink in center. Serve with Chipotle Cream Sauce (recipe below).Chipotle Cream Sauce: 1/2 cup heavy cream cups1 sour cream1 to 2 chipotles in adobo sauceSalt to taste1 to 2 tablespoons chopped cilantro (optional)Add first 3 ingredients to a blender or food processor. Blend or pulse until just smooth. Pour into a small bowl. Season with a pinch of salt. Cover and refrigerate until ready to serve. Stir in cilantro if you like before servingNote: Great as a dip for my Mexican Meatballs or great drizzled over tacos.
