      Mexican Meatballs
      Ingredients for Meatballs:

      1 pound lean (at least 80%) ground beef
      1 egg
      ½ cup dry bread crumbs
      ¼ cup milk
      ½ teaspoon salt
      ½ teaspoon Worcestershire sauce
      ¼ teaspoon pepper
      ¼ cup finely diced onion
      ¼ cup chopped cilantro or Italian parsley
      1 teaspoon Mexican oregano
      a few dashes hot sauce

      Preheat oven to 400°F.  In large bowl, mix all ingredients. Shape mixture into twenty 1 1/2-inch meatballs. Place on a large baking sheet.   Bake uncovered 20 to 25 minutes or until no longer pink in center. Serve with Chipotle Cream Sauce (recipe below).

      Chipotle Cream Sauce:

      ½ cup heavy cream cups
      1 sour cream
      1 to 2 chipotles in adobo sauce
      Salt to taste
      1 to 2 tablespoons chopped cilantro (optional)

      Add first 3 ingredients to a blender or food processor.  Blend or pulse until just smooth. Pour into a small bowl.  Season with a pinch of salt.  Cover and refrigerate until ready to serve.  Stir in cilantro if you like before serving

      Note: Great as a dip for my Mexican Meatballs or great drizzled over tacos.
