      Marinated Shrimp with Citrus Cocktail Sauce


      2 lbs large shrimp, uncooked, peeled, deveined, tail on and thawed

      1/4 cup olive oil

      juice of one lemon

      1/2 lemon cut into wedges

      1 minced shallot

      1 minced garlic


      Rinse shrimp well in cold water. Bring a large stock pot of salted water to a boil. Drop shrimp into water. When the shrimp has changed to a bright pink color and has curled together (roughly 3 minutes). Drain. Rinse with cold water to cool shrimp. Place in a large bowl. Sprinkle remaining ingredients over the top and toss. Shrimp can be enjoyed right away or with in 3 days of making.

      Citrus Cocktail Sauce:

      1/2 cup ketchup

      2 Tbsp prepared horseradish

      juice of 1/2 lemon

      1 tbsp chopped parsley

      Mix all ingredients together. Serve with prepared shrimp.
