Ingredients:4 1?2 cups flour1 1?2 cups butter, cubed2 cups powdered sugar, divided8 large eggsZest of 3 lemons1/2 cup fresh lemon juice (approx. 3 lemons)3/4 cups flour2 teaspoons baking powder2 teaspoons salt4 cups sugarDirections:Preheat oven to 350 degrees. Spray an 11 x 17 inch pan (jelly roll) with cooking spray. Combine first two ingredients with 1 1/2 cups of powdered sugar in a food processor. Pulse until crumbly. Spread crust evenly on the bottom of a sheet pan and press down lightly. Bake for 8 to 10 minutes. In a large bowl, use a mixer to beat all filling ingredients together. Pour them over hot crust. Bake in a preheated 350 degrees for 30 to 40 minutes or until it is set in the middle. Refrigerate to cool. Sprinkle powdered sugar over the top before cutting into squares.
