Ingredients:1 sweet onion, diced3 stalks celery, diced1 tablespoon minced garlic1/2 pound bacon2 pounds whitefish (skin & bones removed)1 tablespoon chicken base3 tablespoons clam base1/2 gallon heavy cream1 quart milk3 diced potatoes, cookedsalt, pepper & thyme to tastecorn starch (in water) to thicken as desiredDirections:Sauté onions, celery, garlic and bacon until just barely soft/cooked. Mix chicken base, clam base, heavy cream and milk in large pot and add whitefish. Warm through and add potatoes. Add sautéed onion/bacon mixture and stir well. Add salt, pepper and thyme to taste. Continue to heat on low to medium heat for about 45 minutes until flavors are mixed thoroughly.Thicken with cornstarch dissolved in water to taste. Serves 8.
