      Grilled Potato Salad

      Ingredients:

      2 pounds small Yukon gold potatoes

      3 tbsp oil

      1/2 cup diced red onion

      1 bell pepper, diced

      3 tbsp fresh basil, chopped

      3 tbsp fresh chives, chopped

      3 tbsp olive oil

      Juice of one lemon

      1 tbsp capers

      salt/pepper

      Directions:

      Prep boil whole potatoes in water for 15 or until tender. Drain and cool completely. Cut potatoes into half. Preheat the grill to medium-high heat. Toss the potatoes in oil, salt/pepper. Grill the potatoes until are smoky and marked, about 10 minutes. Cool.

      Meanwhile combined remaining ingredients in a large bowl. Once potatoes are cooled add to bowl. Toss. Serve chilled.
