Ingredients:2 slices of prosciutto1 egg2 ounces shallots, diced2 ounces fresh baby spinach1 Roma tomato, diced2 ounces shredded cheeseDirections:Place prosciutto in a circle around the inside of a sprayed muffin cup. Saut the shallots, baby spinach and tomato and then place in the cup. Add desired about of cheese. Crack the egg directly on top. Bake at 400 degrees for 10 minutes. Makes one egg cup.
