GREEN BAY - Our next Cooking With You guest is Alissa Kirkpatrick from Green Bay!Alissa joined FOX 11's Emily Deem on Good Day Wisconsin to create some great salads!Autumn Fruit Salad(adapted from the Pampered Chef)3 granny smith apples - diced2 11 oz cans mandarin oranges - drained2 cups red grapes - rinsed and stems removed8 ozcontainer of vanilla yogurt (I use Yoplait)zest of 1 limeOptional add ins1/4 cup chopped nuts of your choice (I use pecans or walnuts)1/2 cup mini marshmallowsMix all ingredients into a medium bowl. Stir to combine.Refrigerate overnight to let the flavor of the lime zest marinate with yogurt.Serve chilled.* I definitely don't think 'autumn' with this salad! I love that it's quick and the lime makes it refreshing!{}Cucumber Pasta Salad The ingredients:1lbpasta nuggets3 medium cucumbers peeled & diced (I like to remove the seeds, but that's optional)I medium onion - chopped1 jar ofMarzetti's original slaw dressing(Marzetti's dressings are normally found near produce & fresh herbs)1 pint of half & half1 T dried dillSalt & pepper to tasteGarlic powder to tasteDirections:Boil large stock pot with salted waterAdd1lb pasta nuggets & cook until al denteWhile pasta is cooking:Chop onion and cucumbersSet asideDrain & rinse pasta with cool water.Combinethe pasta with your cucumbers and onion in a large serving bowl.Add in the jar of slaw dressing and half of your container of 1/2 & 1/2 and stir to combine. Then add your seasonings and refrigerate overnight or for a minimum of2 hours before serving.*Right before serving add the remainder of the half and half, stir to combine and ENJOY!
