      Crab Cake Salad

      Crab Cakes:1 cup crab meat2 eggs 1/4 cup chopped onion 1/4 cup chopped pepper 1/2 cup bread crumbs1 tsp Dijon mustard1 tsp Old Bay seasoningSalt and pepper to taste 1/4 cup chopped parsley 1/4 cup mayo1 lemon for zest and juiceDirections:In a bowl add all dry ingredients. In another bowl add all wet ingredients and whisk together. Combine and add bread crumbs if it feels to wet add a little more bread crumbs. Form in cakes and pan sear or deep fry until golden brown.Chipotle Ranch:1 packet of ranch seasoning1 cup mayo1 cup buttermilk2 tsp of chipotle powderCombine ingredients together.To Assemble Salad:Add mixed baby greens tossed with corn, black beans, tomatoes, avocado, roasted peppers place on plate and top with crab cakes. Serve a side of chipotle ranch dressing.
