Crab Cake Salad

      Crab Cakes:

      1 cup crab meat

      2 eggs

      ¼ cup chopped onion

      ¼ cup chopped pepper

      ½ cup bread crumbs

      1 tsp Dijon mustard

      1 tsp Old Bay seasoning

      Salt and pepper to taste

      ¼ cup chopped parsley

      ¼ cup mayo

      1 lemon for zest and juice


      In a bowl add all dry ingredients. In another bowl add all wet ingredients and whisk together. Combine and add bread crumbs if it feels to wet add a little more bread crumbs. Form in cakes and pan sear or deep fry until golden brown.

      Chipotle Ranch:

      1 packet of ranch seasoning

      1 cup mayo

      1 cup buttermilk

      2 tsp of chipotle powder

      Combine ingredients together.

      To Assemble Salad:

      Add mixed baby greens tossed with corn, black beans, tomatoes, avocado, roasted peppers place on plate and top with crab cakes. Serve a side of chipotle ranch dressing.
