      Ingredients:
      Catfish
      Cornmeal
      Cajun seasoning
      Cooking oil
      French Bread
      Lettuce
      Tomato
      Mayonnaise
      Hot Sauce

      Directions:

      Dredge catfish in cornmeal mix and deep fry in 350 degree oil until golden brown.

      Cut off about an 8" piece of French bread and split in half. Place catfish on bread and dress with shredded lettuce, tomato slices, pickles, mayo and hot sauce.

      Fun note: In New Orleans when you order a PoBoy they will ask you "you want it dressed?" Meaning all of the above mentioned toppings.
