Ingredients:1 pound peeled, uncooked shrimp1 pound smoked sausage, sliced into 1/4 inch pieces2 tablespoons Cajun seasoning, divided2 tablespoons butter2 tablespoons olive oil1/4 cup finely diced onion1 red pepper sliced into thin strips1 green pepper sliced into thin strips2 cloves garlic, minced1 cup1 pint heavy cream1 pound fettuccini, cooked and drained1 cup grated Parmesan cheese3 to 4 chopped scallionsDirections:Place shrimp and 1 tablespoon Cajun seasoning in a bowl. Toss to coat.In a large skillet over medium heat cook shrimp in butter for a few minutes until it starts to turn pink. Remove from plate and set aside. Add oil to the same pan along with sausage and onions and peppers. Cook a few minutes until veggies just start to soften. Add garlic. Cook another 30 seconds. Add chicken stock, heavy cream and additional Cajun seasoning. Turn up heat. Simmer a few minutes. Whisk in Parmesan cheese. Add shrimp and pasta. Toss and heat through. If too thick add more cream. Serve with scallions on top. Note: If you want it less spicy, use less Cajun seasoning.
