Cajun Shrimp and Sausage Fettuccini

1 pound peeled, uncooked shrimp

1 pound smoked sausage, sliced into ¼ inch pieces

2 tablespoons Cajun seasoning, divided

2 tablespoons butter

2 tablespoons olive oil

1/4 cup finely diced  onion

1 red pepper sliced into thin strips

1 green pepper sliced into thin strips

2 cloves garlic, minced

1 cup

1 pint heavy cream

1 pound fettuccini, cooked and drained

1 cup grated Parmesan cheese

3 to 4 chopped scallions


Place shrimp and 1 tablespoon Cajun seasoning in a bowl.  Toss to coat.

In a large skillet over medium heat cook shrimp in butter for a few minutes until it starts to turn pink. Remove from plate and set aside.   Add  oil  to the same pan along with sausage and onions and peppers. Cook a few minutes until veggies just start to soften.   Add garlic.  Cook another 30 seconds.   Add chicken stock, heavy cream and additional Cajun seasoning.   Turn up heat. Simmer a few minutes.  Whisk in Parmesan cheese.  Add shrimp and pasta.  Toss and  heat through. If too thick add more cream.  Serve with scallions on top.  Note: If you want it less spicy, use less Cajun seasoning.
