      Breakfast Quesadilla

      Whisked Eggs:

      ¼ cup milk

      3 eggs

      Beat together and then strain

      Egg Filling:

      3 Tbsp minced green pepper

      2 Tbsp scallions

      Kosher salt and fresh ground black pepper

      Sauté and stir in egg mixture

      Scramble eggs

      Chipotle Sauce:

      1 cup of quality mayo

      1 tsp minced chipotles in adobo sauce (more sauce if you like it hotter)

      To assemble:

      12” flour tortilla

      1/4 cup shredded mozzarella

      1/4 cup shredded cheddar

      5 thinly sliced tomato slices

      Egg filling and sauce fold over and lightly oil each side.  Bake in 475 oven for 3 minutes or golden brown on the outside.
