Banana Peanut Butter Stuffed French Toast
Ingredients:8 slices firmer bread (not the real soft stuff)2 to 3 ripe bananas½ cup peanut butter4 eggs1/3 cup heavy cream or milk2 teaspoons vanillaPinch salt½ teaspoon cinnamon3 to 4 tablespoons butter2 tablespoons powdered sugar, optional½ to 3/4 cup honey, optionalDirections:Spread peanut butter on each slice of bread. Peel banana and slice bananas. Place sliced bananas on to cover peanut butter on 4 slices of bread. Drizzle a small amount of honey on each piece of bread that does not have banana on it. Place honey drizzled piece of bread on top of a piece with bananas on it to make a sandwich. Repeat until you have made 4 sandwiches.In a shallow dish, whisk together, the eggs, cream, vanilla, salt and cinnamon.Heat skillet or a griddle to medium heat. Add butter and heat until it melts. Dip 1 sandwich at a time into egg mixture and place into skillet. Cook until golden brown, about 3 minutes, before flipping. Then, cook another 3 to 4 minutes on the other side. Remove from skillet and sprinkle a little powdered sugar on top. Drizzle with honey.
