Spanish Chicken with Tomatoes and Olives


3ea chicken breasts, butterflied

1 can chopped tomatoes with chilies, mild

1/2c chopped green olives with pimentos

2 slices of prosciutto, sliced into thin strips

1/4c sliced yellow onion

2 cloves garlic, smashed and chopped

mix of smoked paprika, black pepper and kosher salt

Heat a saute pan over medium high heat, add in 2T olive oil. Season chicken with the smoked paprika mix and lay in the pan, cook turning after 2-3 minutes.

Add onions, tomatoes and olives, cover and simmer for 3-4 minutes to combine flavors.

Remove cover add the prosciutto, stir in. serve over couscous.
