Pesto Chicken Sandwiches


2 boneless skinless chicken breasts

¼ cup Italian dressing

2 tablespoons prepared pesto

2 tablespoons mayonnaise

4 tomato slices

Shredded Lettuce

A few slices Fontina or mozzarella cheese

2 Ciabatta or Hard Rolls, toasted and split


Mix together pesto and mayo in a small bowl.  Grill chicken breasts, until cooked through, brushing occasionally with Italian dressing. Top chicken with cheese and cover to melt. Spread 2 tablespoons pesto mixture on both sides of rolls. Place chicken on rolls, along with some lettuce and tomatoes. Makes 2 sandwiches.
