Recipe for Roasted Shrimp Salad from 136 Restaurant and Wine Bar

GREEN BAY – Sharon Peterson of 136 Restaurant and Wine Bar in Sturgeon Bay has come up with a delicious idea for shrimp lovers.  She shared a recipe for a Roasted Shrimp Salad.

21/2# 16/20 count shrimp – peeled & deveined. tails off
3TBS olive oil
3 TBS lime juice
2 tsp chipotle powder
2 tsp paprika
2 tsp seasoned salt
1 cup mayo
3 TBS orange juice concentrate
1 TBS white wine vinegar
1/2 cup fresh dill – chopped
1/2 cup sliced green onions
1 jar capers
1.  Place shrimp in bowl and toss with chipotle, paprika, salt, olive oil & lime juice
2   Place in 400 degree oven for 10-15 minutes till opaque
3.  Allow cooked shrimp to come to room temperature
4.  Cut each shrimp into 4-5 pieces
5.  Place drained capers on pan coated with no stick oven spray for 5-10 minutes till starting to burst open
6.  Whisk mayo, vinegar & concentrate in bowl
7.  Add shrimp, dill, onions & toss with mayo mixture
8.  Check for salt & pepper
9.  Top with baked capers
