2 cups fresh raspberries, plus some for decoration (two pints)
2 (8 oz.) cartons of Lamers Dairy Dairyland’s Best Heavy Whipping Cream
¼ cup powdered sugar, sifted
1 teaspoon vanilla
1 cup white chocolate chips
Pour the Lamers Dairy Dairyland’s Best Heavy Whipping Cream into a large bowl. Beat for a minute or two with a hand mixer. Add sifted powdered sugar and vanilla. Beat until stiff.
Separately, melt the white chocolate chips in a heatproof bowl over simmering water. Transfer all but a couple of tablespoons of the melted white chocolate to a large bowl. (The rest will be used for decoration.) Add one cup of the whipped cream to the melted white chocolate and whisk until blended. Add one cup of the raspberries and mash them a little with the whisk.
Fold in the remainder of the whipped cream. Gently fold in the remaining cup of raspberries. Spoon into individual glasses, top with some raspberries and drizzle with the remaining melted white chocolate. Keep refrigerated until serving.
