25 Oreo Cookies, crushed
4 tablespoons melted butter
1 cup powdered sugar
1 cup semi-sweet chocolate chips
¼ cup butter
1/4 cup heavy cream
2 tablespoons light corn syrup
1 teaspoon vanilla
1 pint coffee ice cream, softened slightly
1/4 cup toasted pecans (optional)
whipped cream for garnish
Preheat oven to 350 degrees. Mix together cookie crumbs and melted butter. Press into a pie plate and bake 5 to 7 minutes Let cool a bit. Combine powdered sugar, chocolate chips, butter, cream and corn syrup in small heavy-duty saucepan. Cook over low heat, stirring constantly, until butter is melted and mixture is smooth. Remove from heat. Stir in vanilla. Let cool a bit.
Drizzle half of the chocolate sauce in bottom of crust. Spoon ice cream over the top. Cover and freeze for a few hours. Refrigerate remaining chocolate sauce. Heat in the microwave for about 30 to 45 seconds. Before serving drizzle pie or slices of pie with chocolate sauce and top with whipped cream, and nuts.
