Pesto Chicken Salad


1/4 cup mayonnaise
1/3 cup  pesto
2 tablespoons fresh lemon juice
4 cups cubed skinless, boneless rotisserie chicken breast
1 cup diced celery
1/4 cup toasted pine nuts (optional)
Salt and pepper


Whisk first three ingredients together in a large bowl.  Stir in chicken, celery, and nuts. Season with a little salt and pepper.  Chill for a few hours before serving.  If mixture gets a bit dry add a little more mayo.  Great served in wraps or crusty bread with romaine lettuce, roasted red peppers, and shredded Parmesan cheese.
