Festive Fourth of July recipes from Runaway Spoon


GREEN BAY – Lindsay Brooks of Runaway Spoon shared these recipes that would be great for a backyard party.

Baby Spinach Salad with Blueberries, Strawberries, Pistachios, Goat Cheese and Orange Poppy Seed Dressing
4 cups Baby Spinach
1 cup Mixed Blueberries and Strawberries
1/2 cup Roasted Pistachios
4 oz crumbled Goat Cheese
1/2 cup Orange Poppy Seed Dressing (Recipe Below)
 
In a salad bowl, combine the spinach, berries, pistachios, and goat cheese. Just before serving, drizzle with dressing.
 
Yield: 4 servings

Orange Poppy Seed Dressing
1 tsp Orange Zest
2 Tbsp Fresh Orange Juice
2 Tbsp Honey
2 Tbsp cup Olive Oil
1 Tbsp Champagne Vinegar
pinch salt/pepper
1 tsp poppy seeds
 
Whisk together all ingredients.
 
Mixed Berry Buttermilk Cobbler with Lemon Cream
8 cups mixed Fresh Berries
1/2 cup Granulated Sugar
3 Tbsp Arrowroot
1 tsp Vanilla Extract
2 cups Flour
1/4 cup Sugar
4oz Melted Butter
4 oz Buttermilk
2 tsp baking powder
Lemon Cream (recipe below), garnish
Combined Berries with sugar, arrowroot, and vanilla. Pour into a greased 8″ baking pan. Whisk together flour, sugar, butter, and buttermilk. Pour over berry mixture. Bake at 375 degrees for 30 minutes or until warm buddle. Serve with Lemon Cream.
Lemon Cream
1 cup Heavy Whipping Cream
Zest of one Lemon
1/4 cup Powdered Sugar
Whip all ingredients until firm.
