Behind the scenes at Scray Cheese Co.

TOWN OF ROCKLAND – The last day of June can only mean one thing in Wisconsin – the end of June dairy month.

Cheese is a staple in Wisconsin and Scray Cheese Co. in the Town of Rockland has been making its famous cheese curds and gouda for 90 years.

The factory has passed down through four generations in the Scray Family, but some things still stay the same, including using handcrafted wax and hand wrapping their cheese products.

In 2009, the factory expanded production by adding a third vat and new silo to hold excess milk. Production of Fontina began in 2012.
