CWY: Peach Mojito and Cucumber Salsa

Renee joined FOX 11′s Emily Deem on Good Day Wisconsin to make some festive recipes for summer!

Peach Mojito
Serves 6

2 ripe peaches (the riper the better)
3 fresh limes (cut 1 1/2 lime into little pieces to muddle, you will squeeze the other 1 1/2 for fresh lime juice)
3 sprigs of fresh mint
6 Tbsp. sugar

Muddle all the above (except the fresh lime juice).

Add lime juice, 16 oz. white rum, 24 oz. ginger ale.  Stir and serve over ice.

Cucumber Salsa

4 to 6 Cucumbers – Seeded and diced

1 Bunch of Green Onions – Chopped

3 to 4 Jalapenos – Seeded and Diced

1 Bunch of Cilantro – Finely chopped

1 to 2 T. Olive Oil

Salt to Taste

Mix together all ingredients and refrigerate overnight.

Serve with your favorite chips or crackers
