Broccoli & Cheddar Stuffed Chicken Breasts


4 chicken breasts, pounded thin
2 cups frozen chopped broccoli, thawed
4 slices cheddar cheese
1 cup seasoned bread crumbs
2 eggs
3 Tbsp water
2 Tbsp butter, melted
salt & pepper to taste
wooden toothpicks


Preheat oven to 350° line a cookie sheet with foil & coat with non-stick cooking spray. In a shallow dish combine egg & water to make a wash. Fill a second dish with bread crumbs. Lay out the pounded chicken, top with a slice of cheese and some broccoli. Wrap chicken around to cover & using a toothpick secure edges. Season with salt & pepper, dip in egg wash & then bread crumbs. Place on prepared cookie sheet, repeat with other breasts. Brush tops with melted butter & bake 30 to 45 mins. Until golden brown & cooked through. Make sure to remove toothpicks before serving.
