Lemon Poppyseed Muffins

Lemon Muffins


2 cups flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 Tbsp poppyseeds
2 tsp lemon zest

1/2 cup buttermilk
1/2 cup sour cream
1/4 cup canola or vegetable oil
1 egg
1 tsp vanilla


Combine dry ingredients in bowl and whisk to combine. In another bowl combine wet ingredients. Add wet ingredients to dry ingredients and mix until just combined. Divide mixture into muffin tins. Bake at 400 degrees for 15-20 minutes or until muffin is cooked through. Enjoy.
