Sweet and Spicy Ghost Pepper BBQ Sauce


Ingredients:

1 medium onion, sliced

1/2 pineapple cored and peeled, sliced into 1/2 inch thick slices

2 cloves of garlic

1 dried ghost pepper

1 Tbsp ground chipotle powder

2 cups ketchup

1/4 cup worcestershire sauce

1/2 cup packed brown sugar

1/2 tsp ground cumin

Directions:

Lightly brush the onions, garlic, and pineapple with a little oil. In a grill pan or on your outside grill, grill the pineapple, onion, and garlic until slightly grill marked and charred. Remove everything from the grill and puree it in a blender. In a large sauce pot heat a small amount of oil and add in the puree from the blender. Cook the mixture while stirring for about 10 minutes and add in the ghost pepper, cumin, and chipotle. Stir in the brown sugar, ketchup, and worcestershire sauce. Turn the heat to low and simmer for 15 minutes. Remove from heat and allow to cool.

Once cooled, blend again until smooth. Serve on just about anything you’d serve BBQ sauce on.
