Recipes from Mad Dog and Merrill



Jalapeno Onion Burger:

1 lb ground chuck
1 small onion, chopped
2 jalapeno peppers, chopped
1 Tbsp Spicy BBQ Sauce
1 Tbsp Worcestershire sauce
1 egg

Mix all ingredients in a bowl and shape into 4-5 patties. Grill to desired temperature and serve.

Pop Pop Poppers:

1 dozen large jalapenos
2 tubs pineapple cream cheese
1/2 cup almond slices

Slice off the side of the peppers; hollow out seeds; stuff with cream cheese; top with a few almond slices; grill direct medium heat for 5-7 minutes or until a little soft.

Honey Ginger Yam Wedges:

2 large sweet potatoes
2 Tbsp vegetable oil
1/3 cup honey
1 Tbsp soy sauce
1/4 tsp ginger powder
1/8 tsp all spice or nutmeg

Mix oil, honey, soy sauce, ginger powder and nutmeg. Cut potatoes lengthwise and brush with oil mixture. Grill over indirect heat for 20 minutes. Baste with mixture and grill 5 to 10 minutes longer.

Steak in Cider:

Four 8 to 12 ounce steaks of your choice
1/4 cup Worcestershire sauce
1 bottle cider
1 Tbsp chives, chopped
1/4 cup olive oil
1 Tbsp rosemary

Combine all ingredients except steak. Marinate steak in the above mixture for six hours. Grill over direct heat until desired doneness. Makes 4 servings.
