8 large baby Bella mushrooms
1 lb imitation crab
1/4 cup medium onion, minced
2 tsp garlic, minced
1 Tbsp red pepper, diced
1/4 cup white wine
1/4 cup bread crumb
1/4 cup Parmesan cheese, grated
1/4 cup fine ground pecans
Remove and mince mushroom stems. In a large saute pan sweat the onion, mushroom stems, garlic and red pepper. Add white wine and reduce 1/3. Turn off heat and add bread crumbs, Parmesan cheese and ground pecans.
Stuff mixture into mushroom caps. Top with a more ground pecan and Parmesan. Bake at 350 degrees for 10-15 minutes.
NOTE: spray the top of the mushrooms with a butter flavored spray for additional flavor.
