GREEN BAY – Our next Cooking With You guest is Alissa Kirkpatrick from Green Bay!

Alissa joined FOX 11′s Emily Deem on Good Day Wisconsin to create some great salads!

Autumn Fruit Salad

(adapted from the Pampered Chef)

3 granny smith apples – diced

2 11 oz cans mandarin oranges – drained

2 cups red grapes – rinsed and stems removed

8 oz container of vanilla yogurt (I use Yoplait)

zest of 1 lime

Optional add ins

1/4 cup chopped nuts of your choice (I use pecans or walnuts)

1/2 cup mini marshmallows

Mix all ingredients into a medium bowl. Stir to combine. Refrigerate overnight to let the flavor of the lime zest marinate with yogurt.

Serve chilled.

* I definitely don’t think ‘autumn’ with this salad! I love that it’s quick and the lime makes it refreshing!

 

Cucumber Pasta Salad

The ingredients:

1lb pasta nuggets

3 medium cucumbers peeled & diced (I like to remove the seeds, but that’s optional)

I medium onion – chopped

1 jar of Marzetti’s original slaw dressing

(Marzetti’s dressings are normally found near produce & fresh herbs)

1 pint of half & half

1 T dried dill

Salt & pepper to taste

Garlic powder to taste

Directions:

Boil large stock pot with salted water

Add 1lb pasta nuggets & cook until al dente

While pasta is cooking:

Chop onion and cucumbers

Set aside

Drain & rinse pasta with cool water.

Combine the pasta with your cucumbers and onion in a large serving bowl. Add in the jar of slaw dressing and half of your container of 1/2 & 1/2 and stir to combine.  Then add your seasonings and refrigerate overnight or for a minimum of 2 hours before serving.

*Right before serving add the remainder of the half and half, stir to combine and ENJOY!
