Mushroom, Spinach and Boursin Cheese Beef Tenderloin


8 oz Mixed Mushrooms

3 oz Boursin Cheese

3 Tbsp Olive Oil

Salt and Pepper, To Taste

4 Beef Tenderloin Filets

1 cup Spinach cooked, drained and chopped


Cut mushrooms to desired size.  Season with salt and pepper and 2 tablespoons olive oil. Roast mushrooms in 350° oven for 15 minutes.  Remove and cool. Add Boursin cheese and cooked spinach to mushrooms and mix well. Season steak with salt, pepper and 1 tablespoon olive oil. Sear steak on both sides, top with mushroom, Boursin cheese and spinach mixture. Bake in 350° oven until desired doneness is achieved.
