Egg Cups


2 slices of prosciutto
1 egg
2 ounces shallots, diced
2 ounces fresh baby spinach
1 Roma tomato, diced
2 ounces shredded cheese


Place prosciutto in a circle around the inside of a sprayed muffin cup. Sauté the shallots, baby spinach and tomato and then place in the cup. Add desired about of cheese. Crack the egg directly on top. Bake at 400 degrees for 10 minutes. Makes one egg cup.
