One giant cupcake pan (found at craft or kitchen stores)
Cake release spray
Two cake mixes in any flavor of your choice
2 packages (4 oz) of any instant pudding/pie filling
2 cups of water or milk
2/3 cup of vegetable oil
Preheat oven to 325 degrees. Spray your cupcake pan with spray. In a stand mixer or using a hand held mixer, whisk your cake mix and instant pudding together. Gradually add eggs, and liquid ingredients. Mix for 2 minutes, scraping bowl down to make sure all ingredients are incorporated.
Now that your batter is prepared, fill the top part of your cake pan (the cone shaped cavity) with 2 ½ cups of batter. The bottom “cupcake liner” part of the pan will be filled with 3 ½ cups of batter. Your giant cupcake will need to bake for about 60-70 minutes depending on your oven. To ensure the cupcake bakes evenly, rotate the pan 30-40 minutes into baking. You will know it’s done baking when a toothpick inserted into the cake comes out clean.
Cool in pan for 15-20 minutes. Then remove both pieces from the pan and set on your cooling rack.
Now that your cake has cooled, you will need to level both sides of the giant cupcake. You can do this by putting the cake back in the pan. Using a serrated knife, cut off the excess cake that is sticking out of the pan.
Using a piping bag or a frosting spatula, spread a layer of frosting on the top of your bottom “cupcake liner” piece so that the two pieces will stick together. Now stack the top piece on top of the bottom piece. Decorate as you wish.
1 cup of butter
1-2 tsp vanilla extract
1-2 tbl of heavy whipping cream
3 cups of powdered sugar
Cream together butter, vanilla, and heavy whipping cream. Gradually add powdered sugar until you reach thickness desired. The more powdered sugar added, the thicker frosting will be.
