2 cups cream
1 clove garlic, minced
2 lbs shredded cheese (use your favorite cheese or combination of cheeses) (Used Black Pepper BellaVitano and Red Barn Heritage Select Cheddar)
1 Tbsp Flour
Fresh grated nutmeg
Salt and White Pepper to taste
Heat cream to boiling with garlic. Remove from heat and stir in cheeses. Continue stirring until cheese is melted. Once cheese is melted, stir in hot sauce. You may need to place cheese sauce back on low to medium heat to melt cheese completely. Do not boil sauce once cheese is added. Grate a small amount of nutmeg into sauce and taste. Season accordingly.
Cook pasta according to instructions. Drain and add hot cheese sauce. Toss to coat pasta. Serve topped with breadcrumbs if desired.
