Gluten Free Red Velvet Cupcakes


Ingredients:

3/4 cup vegetable oil
3/4 cup sugar
1 tsp vanilla
1 egg
1/2 tsp red food color
1 Tbsp dutch cocoa
1/4 tsp salt
3/4 tsp xanthan gum
1 1/4 cup gluten free flour
1/2 cup buttermilk
3/4 tsp baking soda
1 tsp vinegar

Directions:

Mix your oil and sugar together add your eggs and vanilla mix well.  And your cocoa and  food coloring.  Mix until well blended then add your flour and Xanthan gum mixture alternating with your buttermilk.  Add your vinegar to your baking soda then add it to your mixture scoop into your cupcake pan and bake for approximately 18 minutes.

Frost with your favorite vanilla or cream cheese frosting.
